Today was my husband’s first day working in a new department of his store. Since I wouldn’t be home when he came home for lunch to see how his day was going, and I had some cookie dough in the refrigerator, I threw some cookies in the oven that he could have after his lunch and a sickeningly sweet note of encouragement.

My husband loves these chocolate chip cookies.  He says they could end all war. If we just sat all the warring world leaders down with some of these cookies fresh from the oven and some glasses of milk, they would just agree to live in peace because you can’t eat these cookies and not feel good about life. There is nothing like chocolate chip cookies and milk. It’s a classic.

I bake all cookies on my Pampered Chef stoneware my mother-in-law bought us. While they are incredible baked on stoneware, they are still great cookies baked on a regular cookie sheet. We love these straight from the oven so we only bake six at a time, cover the cookie dough bowl with plastic wrap and stick it in the fridge until the next day. That way we always have fresh cookies.

Chocolate Chip Cookies from The Food Network cookbook How to Boil Water

Ingredients:

  • 1/2 cup unsalted butter
  • 3/4 cup backed dark brown sugar
  • 3/4 cup white sugar
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 2 1/4 cups all purpose flour
  • 3/4 tsp baking soda
  • 1 tsp salt
  • 12 ounce bag of semi-sweet chocolate chips

Directions

  1. Evenly position 2 racks in a microwave in the middle of the oven and preheat oven to 375 degrees F.
  2. Put the butter in a microwave safe bowl, cover, and microwave on medium power until melted. Or melt butter in a small saucepan. Cool slightly. Whisk the sugars, eggs, butter, and vanilla in a large bowl until smooth.
  3. Whisk the flour, baking soda, and salt in a small bowl. Stir the dry ingredients into the wet ingredients with a wooden spoon, taking care not to over mix. Stir in the chocolate chips or chunks and nuts if using.
  4. Line 2 baking sheets with parchment paper. Scoop heaping tablespoons of dought onto the prepared baking sheets. Wet hands slightly and roll the dough into balls. Space the balls about 2 inches apart on the pans. Bake until the cookies are golden but still soft in the center, 12-16 minutes, depending on how chewy or crunchy you like your cookies. Immediately transfer cookies with a spatula to a rack to cool.
